3-28 Next Week’s Recipes For The Week

I’ll be dazzling my husband and guests that stop by with some lovely recipes I will be using for next week’s suppers. All these recipes are great in my book and what better way to get new ideas than to share.

Here is my Vegan Menu for the week:

  • Potato Flatbread
  • Baked Tofu Spicy Peanut Sauce
  • Cut tomatoes
  • Avocados
  • Spinach leaves
  • Vegan sour cream
  • Beverage of Choice
  • Let’s start Monday off in style with wonderful & spicy. I fix this without serving the noodles as suggested in the original recipe. I make Potato Flatbread and use the baked tofu in peanut sauce as a filler and serve other veggies to put on top and turn it into a tostada. The flat bread holds together well so you can even wrap it up like a burrito if you want.


  • Potato Soup
  • Corn Bread *Vegan cornbread is easy. Just substitute non dairy milk and egg replacement. I use cornmeal and not a mix.
  • Peas vegetable of choice
  • Apple Sauce or Salad of Choice
  • Beverage of Choice
  • Our temperatures here are still fluctuating so I am taking full advantage of it and making my Potato Soup plus I have enough for left overs because I do not cook on Friday.

    Jackfruit Pot Roast
    Salad of Choice
    Vegan Chocolate Mousse


  • White Bean & Artichoke Vegan Sandwich Filling and your choice of bread (It is sandwiches tonight because good grief I have bee cooking all week.!)
  • Air Fryer Carrots (You can cheat and have french fries if you want but why not dazzle your family one more night?)

  • Cup of Potato Soup (I made Tuesday-)
  • Beverage of Choice
  • Friday and the Weekend
    Commonly called ‘Fend For Yourself Night at my house. There are left overs in the fridge!
