Beans lentils & tofu are always on hand at our house. The beans store easily on pantry shelves. Also the art of cooking with tofu is a love of mine and lentils appear in some of our favorite casseroles.

Growing up in the north, beans and lentils never made an appearance on our menu. Further more tofu was not even a word in my vocabulary.
Closed Minded Youths
In those early years potatoes not beans were an acceptable meat alternative. As a result among my generation our mind set was closed and unadventurous.
Our high school cafeteria became aware of this when serving black-eyed peas, greens and grits.
I remember watching my full lunch plate joining the other rejected meals on the conveyor belt going back to the kitchen untouched. As a result, it was never served again.
A Change of Taste in Adulthood
Adult hood brings new friends new places and new food experiences. I am glad I am now broad minded enough to give other foods a chance. By the same token, my world to new cultural food experiences has made me eating less routine and amazing.
