Beans lentils & tofu are always on hand at our house. The beans store easily on pantry shelves. Also the art of cooking with tofu is a love of mine and lentils appear in some of our favorite casseroles.

Beans, Lentils & Tofu In The Early Years

Growing up in the north, beans and lentils never made an appearance on our menu. Further more tofu was not even a word in my vocabulary.

Closed Minded Youths

In those early years potatoes not beans were an acceptable meat alternative. As a result among my generation our mind set was closed and unadventurous.

Our high school cafeteria became aware of this when serving black-eyed peas, greens and grits.

I remember watching my full lunch plate joining the other rejected meals on the conveyor belt going back to the kitchen untouched. As a result, it was never served again.

The Appearance of Beans, Lentils & Tofu in Adulthood

Adult hood brings new friends new places and new food experiences. I am glad I am now broad minded enough to give other foods a chance. By the same token, my world to new cultural food experiences has made me eating less routine and amazing.

    I can totally relate! Beans were not a part of my childhood meals, aside from the occasional pork n’ beans served with barbecue. Don’t even think I knew what a lentil was until adulthood! Now, glad to discover the endless varieties. This cookbook sounds like an excellent resource!

      I am so glad you had a beanless childhood too. I wasn’t sure if I was the only one that had such a protected childhood. LOL

      I had never eaten lentils until I met my husband and there are a lot of great recipes featuring them.

    I never had beans, lentils or tofu growing up. Come to think of it, I’m not sure I’ve ever had lentils or tofu, still! Recipe sounds great, I may just have to try!

      Psst tofu peanut butter pie will win you over to the tofu side in an instant. There are some great recipes that will win over any resistor of beans in this cook book.

    I didn’t eat beans or lentils till I was an adult so I know what you mean. They seem like grown up foods. Glad there is a cookbook out there that helps you get started with them.

      I am more of a fan of lentils when they are in a casserole but I am fixing more lentils and adding more variety of spices which I love.
