Pie Crust is such a pleasure these days now that I have my Hamilton Beach Eclectrics Stand Mixer. Making pie crust for the first time was amazing and I use the number 2 setting for best results. It was a little embarrassing to think how stubborn I have been in the past with my insistence of always making it by hand. Another eye opener was how easy the dough rolled out with the rolling pin. I get a little excited now days when it is pie crust day. Equally my husband gets excited when he hears I am making this favored dessert.
My husband and I live in a two room cabin and recently remodeled our kitchen. I gave up the oven and elected to use a convection counter top and toaster oven. It was a smart move for two people because it gave me extra space and is one of our cost saving ways of keeping our electric bill around $60.00. We do have central air, in case you have already envisioned us sitting in front of a fan with a bucket of ice, to keep cool during the Florida summers. We like saving money but not to that extent. However, the point of telling you all that was that any recipe I post for baking is accomplished in a toaster oven.
My husband’s taste differs from mine. Sugar is my drug of choice where as he is a ‘non sugar totalitarian’. So there is a struggle creating recipes that is sweet enough for me yet will pass his “too sweet” radar detector. We both love this recipe.
All Spice Graham Cracker Rolls

Pour flour in salt in stand mixer and turn to setting 2 on mixer. Slowly add vegetable oil until the dough forms small pea like pieces. Now slowly add water until dough forms.
Roll dough on floured surface to form long rectangle shape.
Graham Cracker Filling Recipe
Take rolling pin and press and roll over graham crackers in wrapper. I make mine fine with some small pieces. Measure 2 cups and pour in bowl.
Add the brown sugar and mix thoroughly with hand blending the two ingredients together.
Spread vegan butter over rolled out dough.
Generously sprinkle allspice over buttered dough and spoon the graham cracker filling onto surface.
Begin rolling dough while pinching the sides and tucking them in to form a long cylinder.
Cut slits on the top which lets the dough cook evenly and also serves as cutting the rolls into portion sizes when cooked.
Bake in preheated toaster oven at 350 for 40 minutes. Flip over roll at 20 minutes and bake for another 20 minutes.
*Cinnamon can easily be substituted for allspice . It is another lovely way to enjoy this dessert and is very similar to the one my mom made when I was a child.
